This is the largest chef knife I’ve made. It turned out very well. This is made of 1095 steel with a reconstituted stone handle that is 1 inch thick. The red stone is contrasted by a yellow vulcanized fiber racing stripe. Turned out very well and the customer is happy with it. Which is all that really matters. Better yet, this is the first knife I created a custom Saya for. A saya is traditionally a Japanese knife case custom made for the individual knife. The one I made is in the 2nd photo below and is handmade from Poplar wood with a red linen Micarta decoration. I’m never going to make another knife using this handle material. I had an allergic reaction to the reconstituted stone that required medical attention and has knocked me out of the knife shop for over a week. Who knew? Ah well, I had fun making the knife.
