We take old knives that either we find or that people bring in and clean them up and put new handles on them. We don’t take all of the patina off unless asked to as we like to preserve some of the history that comes with the knife. We fixed up this 16 inch (total length) slicing knife for Hoover Alexander of Hoover’s Cooking this week and it turned out really nicely. We put a Rosewood handle with solid stainless steels pins to give it several more decades of life.
